Instructions

  1. Combine the fig preserves, champagne vinegar, garlic and sage in a small saucepan over medium-high heat. Bring to a boil, stirring constantly. Reduce heat to medium. Simmer, uncovered, for 2-3 minutes or until glaze is reduced to about 1/2 cup, stirring frequently. Remove from the heat. Cool to room temperature. Transfer glaze to a small serving bowl.
  2. Cut a third of the Belaire into slices; place the slices and remaining wedge on a serving board. Fill in board with crackers, figs, grapes, chips, pistachios and glaze. Spoon glaze over Belaire; sprinkle with pistachios.

Cheesemonger Tip

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Belaire is a Port Salut–style cheese with a soft, creamy texture and a mild, milky flavor that’s easy to love. Its distinctive bright orange rind adds character to this cheese. Enjoy it on its own, with simple crackers or fresh fruit. A crisp white wine makes an ideal pairing.
