Instructions

Pulled Pork:

  1. Combine the brown sugar, mustard, chili powder, salt and pepper in a small bowl; rub over pork roast. Place roast into a greased 5-quart slow cooker. Pour in apple cider.
  2. Cover and cook on low for 8-10 hours or until meat is tender. Turn slow cooker off. Let rest for 10 minutes.
  3. Set aside 1/2 cup cooking juices; discard remaining juices. Transfer roast to a cutting board; shred meat. Return pork to slow cooker. Stir in barbecue sauce. Cover and cook on low for 30 minutes.

Coleslaw:

  1. Combine the mayonnaise, jalapeno peppers, brine, apple cider vinegar, sugar and celery seed in a large bowl. Fold in coleslaw mix.

Sliders:

  1. Line two rimmed baking sheets with aluminum foil. Place bun bottoms on prepared pans. Top buns with pork, additional barbecue sauce, if desired, and cheddar. Broil 3-4 inches from the heat for 1-2 minutes or until cheese is melted. Top with coleslaw and jalapeno pepper slices. Replace bun tops.
