Italian Chicken Sausage Dinner with Mozzarella

The roasted tomatoes and kale add rustic notes to this simple pasta dish, but the big flavor finale is from the decadent, fresh and milky mozzarella cheese.

  1. Heat oven to 400°F.
  2. Toss tomatoes with 2 tablespoons olive oil on a rimmed baking sheet. Season with salt and pepper. Bake for 20-25 minutes or until softened, stirring occasionally.
  3. Cook pasta according to package directions; drain, reserving 1 cup hot pasta water.
  4. Meanwhile, cook sausage in remaining olive oil in a large skillet or Dutch oven over medium heat until browned. Add garlic and red pepper flakes; cook and stir for 1 minute.
  5. Stir in the kale, pasta and 3/4 cup reserved pasta water. Cook and stir until kale is wilted and liquid is thickened and coats the pasta, adding pasta water if necessary. Stir in tomatoes. Season with salt and pepper.
  6. Remove from the heat. Gently stir in mozzarella.
