Yellowstone Cheese opened its doors halfway between the North Pole and the Equator, in Cadott, Wisconsin, on November 14, 2007. Cheesemaker Dave Anderson brings over 15 years of experience to Yellowstone Cheese. The company uses milk proudly sourced from a farm locally owned by Jeremy and Heidi Kenealy (and their children Brad and Brooke). The Kenealy Farm is a Grade A, BGH-Free farm only 200 yards away from the factory, where it's so close that the milk is hauled over in a bulk tank on wheels, where it's crafted into a variety of cheeses using colby, monterey jack, or cheddar for the base. And why the Yellowstone name in Wisconsin? Turns out the factory is located on the Yellowstone Trail - the first automobile route from Plymouth Rock to Puget Sound!
