Established in 1973, the Country Connection Cheese Company has been producing artisan cheeses in the Driftless Hills of Southwest Wisconsin for over 40 years. Why "driftless", you might wonder? The glaciers that swept through the Midwest during the last ice age missed an area of Southwest Wisconsin called the “driftless” region. High ridges and valleys retained their original limestone layer beneath the soil, and in the 1830s, Swiss immigrants discovered that the region was geologically akin to their homeland. They settled in hopes that their cows would produce milk that echoed the styles of cheeses of their native Switzerland... and they did! While the cows graze today, skilled cheesemakers at Country Connection carefully handcraft cheese in small batches. Traditional techniques and attention to detail give each Country Connection cheese a distinctive texture and flavor. They are known for flavored cheeses, smoked cheeses, and what they lovingly refer to as the "classics".
