Panela is a Mexican-style cheese with a milky flavor and creamy texture. It was originally made in a basket to mold the cheese. Used mostly in Mexican-style dishes such as nopal salad or quesadillas. It does not melt but is great fried with vegetables. It is similar to Paneer which is a traditional cheese from India and also made in Wisconsin.
