There are two types of gloucester - single and double. Double gloucester has a natural rind; the double style is aged for longer periods. Both are produced in round shapes with double gloucester rounds being larger. Similar to derby and cheddar, this English-style cheese is hard and smooth with a mild, rich flavor.
