Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Aged Cheddar, Cheddar Blue or Young Cheddar can be used in this recipe.

Instructions

  1. Place the ham, Red Rock and cornichons in a food processor; cover and pulse until combined. Transfer to a medium bowl. Stir in the mayonnaise, Dijon mustard and half of the scallions. Serve on crackers. Garnish with remaining scallions.

  • We tried this recipe with Potter’s Crackers Wisconsin Rye.
  • Can’t find cornichons? No problem. Swap in your favorite baby dill pickles.
