Red Rock Ham Salad Canapes

Ingredients

2 cups diced smoked ham
12 ounces Roelli Red Rock cheese, diced (2 cups)
1/2 cup diced cornichons
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 bunch scallions or green onions, finely chopped
24 rye crackers

Cheese

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Aged Cheddar, Cheddar Blue or Young Cheddar can be used in this recipe.

Instructions

Place the ham, Red Rock and cornichons into a food processor; cover and pulse until combined.
Combine the mayonnaise, Dijon mustard, half of the scallions and ham mixture in a bowl. Serve on crackers. Garnish with remaining scallions.
