Instructions

  1. Sprinkle gelatin over cold lime juice in a small bowl. Let stand for 5 minutes.
  2. Meanwhile, warm the cream, milk and sugar in a large saucepan over medium-low heat. Cook for 3-4 minutes or until sugar is dissolved, stirring occasionally. Remove from the heat.
  3. Gradually add gelatin mixture to the saucepan, stirring until gelatin is dissolved completely. Stir in mascarpone until smooth. Spoon cream mixture into eight 4-ounce greased ramekins. Cool slightly. Cover loosely with plastic wrap. Refrigerate for at least 4 hours or until set.

Mixed Berry Coulis:

  1. Combine the berries, sugar and water in a large saucepan. Bring to a gentle boil over medium-low heat, stirring occasionally. Cook for 4-5 minutes or until fruit is softened, stirring frequently.
  2. Process berry mixture in a blender or with an immersion blender until smooth. Strain mixture through a fine mesh strainer into a large bowl; discard solids. Stir in lime juice. Cover and refrigerate until serving.
  3. Gently run the tip of a thin knife around the top edges of each ramekin. Dip ramekins into warm water for 4-5 seconds. Invert panna cottas onto serving plates. Garnish with coulis and berries.

Make-ahead tip: Prepare the mixed berry coulis up to 5 days ahead. Cool completely. Store in an airtight container in the refrigerator.
