  1. Place a muffin pan into the oven on the middle rack. Heat oven to 425°F.
  2. Beat eggs in a large bowl until blended. Beat in the milk, flour, sugar and vanilla until frothy.
  3. Melt 3 tablespoons butter. Remove pan from the oven. (Pan will be hot!) Brush muffin cups with butter. Fill each muffin cup about three-fourths full with batter; sprinkle with 1 cup Cūpola. Bake for 15-17 minutes or until puffed and edges are golden brown.
  4. Meanwhile, melt remaining butter in a skillet over medium heat. Add the pineapple, brown sugar, rum and cinnamon; cook and stir for 5-7 minutes or until pineapple is tender.
  5. Spoon pineapple mixture into pancakes. Sprinkle with coconut flakes and remaining Cūpola. Serve warm.

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Cūpola Artisan Cheese is an original small-batch raw milk cheese developed for Red Barn Family Farms by Door Artisan Cheese Company. It’s a semihard cheese that’s smooth like gouda and has the sweet, nutty flavors of an aged parmesan with notes of caramel and toasted pineapple. It won First Place in 2019 at the American Cheese Society Cheese Competition.
