Marinated Colby Cobb Salad

Ingredients

Marinated Colby:

1/2 cup olive oil
2 garlic cloves, minced
2 tablespoons minced fresh parsley
1 teaspoon minced fresh tarragon
1 teaspoon snipped fresh dill
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon crushed red pepper flakes
8 ounces Hook’s Colby cheese, cut into triangles

Cheese

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Colby or Mixed-Milk Blue can be used in this recipe.

Instructions

Marinated Colby:

Combine the first eight ingredients in a large jar or bowl. Add colby. Cover and refrigerate for at least 4 hours.

Salad:

Arrange lettuce on a large serving platter. Layer with the carrots, eggs, cucumber, avocado, radishes, peas and bacon. Top with colby. Sprinkle with blue cheese. Serve with green goddess dressing.
