Potato Salad with Quark Ranch Dressing

Wisconsin Cheese Potato Salad with Quark Ranch Dressing Recipe


Quark Ranch Dressing:

Potato Salad:


Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Quark can be used in this recipe.


Quark Ranch Dressing:

  1. Whisk the quark, mayonnaise and 3 tablespoons milk in medium bowl until blended. Whisk in the green onions, chives, dill, parsley, oregano, garlic powder and hot pepper sauce. Refrigerate for at least 4 hours or overnight. Add remaining milk if desired, a tablespoon at a time, until desired consistency.

Potato Salad:

  1. Place potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat; cook, uncovered, for 15-20 minutes or until potatoes are just tender. Drain and cool.
  2. When cool enough to handle, cut potatoes into 1/2-inch rounds. Place in a large bowl. Lightly season with salt. Add green onions; toss lightly. Cool potatoes completely. Add celery and red bell peppers. Gently fold in 1 cup dressing, folding in additional dressing as desired. Season with salt and pepper to taste. Cover and refrigerate for at least 1 hour or until flavors are blended. Let stand for 15 minutes before serving.
