Potato Salad with Quark Ranch Dressing

Instructions

Quark Ranch Dressing:

  1. Whisk the quark, mayonnaise and 3 tablespoons milk in a bowl until blended. Add the green onions, chives, dill, parsley, oregano, garlic powder and hot pepper sauce; whisk until combined. Cover and refrigerate for at least 4 hours or overnight. Add remaining milk, a tablespoon at a time, until desired consistency.

Potato Salad:

  1. Place potatoes into a large saucepan; cover with water. Bring to a boil. Reduce heat to medium. Cook, uncovered, for 15-20 minutes or until potatoes are just tender. Drain and cool.
  2. When cool enough to handle, slice potatoes into 1/2-inch rounds. Transfer potatoes to a large bowl. Lightly season with salt. Gently stir in green onions. Cool potatoes completely.
  3. Add celery and red bell peppers. Gently fold in 1 cup dressing. Fold in additional dressing as desired. Season with salt and pepper to taste. Cover and refrigerate for at least 1 hour or until flavors are blended.
