Instructions

  1. Unfold one sheet puff pastry on a lightly floured surface; roll out into an 11 x 9-inch rectangle. Spread 1/4 cup cherry preserves on pastry. Sprinkle with 1/2 teaspoon pepper and 1/2 teaspoon marjoram. Top with half of the prosciutto to within 1/4 inch of edges. Sprinkle with 1 cup Balsamic BellaVitano®.
  2. Starting with a short side, tightly roll up dough. Brush remaining edge of dough with water; press and pinch seam to seal. Wrap in plastic wrap. Freeze for 1 hour. Repeat steps, starting with puff pastry.
  3. Heat oven to 400°F.
  4. Cut each roll widthwise into 1/2-inch slices. Place 3 inches apart on parchment-lined baking sheets. Lightly brush pinwheels with egg wash. Sprinkle with remaining Balsamic BellaVitano® and 1 teaspoon marjoram.
  5. Bake for 15-20 minutes or until golden brown.
  6. Meanwhile, combine the balsamic vinegar, remaining preserves and marjoram in a small saucepan. Bring to a boil, stirring constantly. Reduce heat to low. Simmer, uncovered, for 5-6 minutes or until slightly thickened, stirring frequently. Cool for 10 minutes. Serve sauce with pinwheels.

Recipe Tip

Fresh thyme or oregano could be substituted for the fresh marjoram. However, fresh marjoram is slightly sweeter and milder than both; adjust the amount to taste.

Cheesemonger Tip

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Be sure to enjoy the rind of this balsamic beauty; it’s part of the tasting experience! Master Cheesemakers at Sartori® Cheese chose to bathe their Original BellaVitano® in premium imported 6-year-old Italian Modena balsamic vinegar. The vinegar brightens the cheese’s sweet, nutty and fruity notes.
