Wisconsin Cheese Fattoush Salad with Feta Recipe

Honey-Lemon Dressing:



Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Feta can be used in this recipe.


Honey-Lemon Dressing: 

  1. Whisk the first three ingredients in a small bowl until blended. Slow whisk in olive oil. Set aside.


  1. Grease grill grate. Heat grill to medium.
  2. Grill pitas, covered, over medium for 1-2 minutes on each side until toasted. Cool slightly; cut into strips.
  3. Toss the spinach, tomatoes, cucumber, red onion, radishes, green onions and mint in a large salad bowl. Drizzle with reserved dressing; toss to coat. Season with salt and pepper to taste.
  4. Transfer to a serving platter. Arrange feta and pita strips on top of salad. Top with chicken, eggs and lemon wedges if desired.
