Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Mozzarella or Parmesan can be used in this recipe.


  1. Heat oven to 450°F. Line rimmed baking sheets with parchment paper.
  2. Dissolve yeast and sugar in warm water in a large bowl of stand mixer, fitted with the dough hook attachment. Let stand for 5 minutes. Add salt and 4 1/2 cups flour; beat on low speed until mixture is combined. Add butter. Mix on medium until the dough begins to pull away from side of bowl, about 3-4  minutes longer. Add additional flour, 1 tablespoon at a time, to form a soft dough. Remove dough from bowl. Form into ball.
  3. Divide dough into 36 equal pieces. Roll each dough piece into a ball. Flatten each into a circle. Place 1 pepperoni piece and 1 mozzarella cube into the center of each; sprinkle with parmesan. Pull dough over cheese; roll dough into balls, ensuring cheese is completely covered. Seal dough. 
  4. Bring water and baking soda to a boil in a Dutch oven over high heat, stirring occasionally. Drop balls, a few at a time, into boiling water. Boil for 30 seconds; submerging balls in the boiling water. Remove with a slotted spoon; drain on paper towels.
  5. Transfer to prepared pans, placing balls 1 inch apart. Brush with egg wash; sprinkle with salt. Bake for 8-10 minutes or until tops are browned.
  6. Serve warm with marinara sauce.
