Soft Pretzel Pizza Bites

Ingredients List


  1. Heat oven to 450°F. Line a baking sheet with parchment paper or grease baking sheet.
  2. Dissolve yeast and sugar in warm water in the large bowl of a stand mixer fitted with the dough hook attachment; let stand for 5 minutes. Add salt and 4 1/2 cups flour; beat on low speed until combined. Add butter. Mix on medium until dough begins to pull away from side of bowl, about 3-4  minutes longer. Add additional flour, 1 tablespoon at a time, to form a soft dough. Remove dough from bowl. Form into ball.
  3. Divide dough into 36 equal pieces. Roll each dough piece into a ball. Flatten each into a circle. Place 1 pepperoni piece and 1 mozzarella cube into the center of each; sprinkle with parmesan. Pull dough over cheese; roll dough into balls, ensuring cheese is completely covered. Seal dough. 
  4. Bring water to a boil in a Dutch oven. Carefully stir in baking soda. (It will bubble up.)
  5. Place dough balls into boiling water, a few at a time. Cook for 30 seconds; remove with slotted spoon. Place on parchment paper. Repeat with remaining dough balls. Arrange balls on prepared baking sheet about 1 inch apart. Brush with egg; sprinkle with salt. Bake for 8-10 minutes or until tops are browned.
  6. Serve warm pretzels with marinara sauce.
